Flame and clean accurately the chicken quarters or the drumsticks. Halve them if necessary.
Season them with salt and pepper and brown the meat in a skillet in both sides.
Add to the skillet the potato wedges, then the onion wedges, the unpeeled garlic cloves crushed with the cheek of a knife. Lightly season with salt and pepper until golden brown.
Add the tomato wedges and sauté briefly, without breaking them. Deglaze with the mature wine or vino rancio.
Place all the ingredient in the ceramics pot, cover with its lid and close the OCOO with the pressure lid. Set the Wellbeing mode for 2 hours at 95°C and cook.
